Mix the margarine with the sugar and a pinch of salt.
Once an homogeneous mixture has been achieved, add the flour and the grated lemon rind; then add progressively the olive oil and the soja milk (if you want) until the resulting pastry is no longer sticky.
This pastry should not be worked intensively because we want to obtain a very brittle pastry.
Once the pastry is ready, cover it with clingfilm and let settle down in the fridge for at least 30 minutes.
Then, stretch it and, using a pastry ring, cut the pastry in circles.
Bake at 180ºC for 15 to 20 minutes.
Peel the apples and take away the core and any fibrous rests. Chop the apples and set them aside in a bowl together with the sugar and the margarine. Cover the mixture with clingfilm and prepare the microwave oven. Cook the apples for 15 minutes at maximum heat or until they are tender. Once the apples are ready, beat them with the blender or using a fork in order to achieve a texture where apple pieces can be tasted.
