My name is Nikki Gilbert, and I graduated from Wells College in 2007 with a BA in Biological and Chemical Sciences, my concentration in Biology. I am also certified to teach Biology 7-12 in New York State. Sustainability has been a passion of mine for a long time, but I only recently decided to make a drastic shift toward eating locally grown foods. This website is a blog to learn about eating locally while on a budget in Ithaca. Can it be done without breaking the bank? Is it really that more complicated shopping for locally grown foods instead of just going to the grocery store? Will I see or feel any changes in my family, both physically and emotionally, after changing our eating habits? Will I like the food as much? Will it make preparing meals harder, more time-consuming, and less fun? Will I still be able to afford to have dinner guests over on this new, perhaps more expensive diet? Can I master my own backyard produce garden? How much will that cost me? Can I can, freeze, and dry my own food? Will I flake out on this after a few months? Will I starve? Am I crazy? These are the questions I will seek to answer in my daily? blog.
