With the heat I left aside complicated dishes, which moreover are not my thing. I love easy meals, simple and tasty. It's time to go outside and enjoy the weather. Chatting with friends or taking walks and it´s time to drink some refreshment and cooking light meals, as well And to these days nothing more refreshing than a lemonade and citrus-based desserts. I always have a wildcard in the refrigerator that inspires me to make the most delicious and refreshing dessert. Lemon curd. With it you can let loose the imagination and do something like this. Press in papaya wafers , topping with lemon curd, fresh fruits, whipped cream and chocolate chips. It is very useful to have at home some lemon curd, and remember it can always be stored for up to two weeks in the refrigerator. Lemon curd Ingredients 5 egg yolks 1 cup sugar refined 3 washed lemons (juice and zest) 100g butter Method : Mix the egg yolks with the sugar.Beat well until pale and add lemon juice and zest . Meanwhile put water to boil in large saucepan. Take the egg mixture to cook in a double boiler, stirring constantly until thickened, and adhere the spoon. Remove from heat and add the butter into pieces and stir until melted, repeat until all the butter finish. Place cold in a glass pot and cover with film.
