2 boneless chicken breasts, cut in 2" strips
3/4 cup of frozen corn

A hearty bowl of Lentil Soup sure is good on a cold winter day. Lentils are high in fiber, folate, magnesium, iron and protein. They are great for vegetarians or people who do not eat alot of red meat because protein makes up 26% of the calories in the lentils.
In this soup there is onions, garlic, carrots, celery, potatoes, a can of diced tomatoes and water, 1 cup of lentils and egg noodles.
Saute your veggies, add the tomatoes and enough water to fill your pot. Add the lentils and br [..]

I whipped up these cookies yesterday afternoon. I didn't use a recipe, like usual. For the dry ingredients I used mainly oatmeal and added coconut flour, wheat germ, bran, cinnamon, raisins, baking soda and baking powder. For the wet, 1 egg, pineapple juice, milk and coconut oil.
Oatmeal is so healthy. It reduces the bad cholesterol in your body, high in fiber, stabalizes your blood sugar therefore reducing the risk of Type 2 diabetes. It keeps you feeling full for a long time....therefore [..]

We try to eat a salad daily. We add different ingredients to it to add different tastes such as, raisins, walnuts, pomegranates, avocados, cheese (I love sprinkling Parmesan over the salad), tuna, salmon, anchovies, etc. Anything goes! Make sure you use a healthy low fat dressing.

It's time to start planning our winter vacation and making homemade Papaya Juice is just the beginning -- putting us in a tropical mood just like the fresh juices prepared on resorts.
Papayas are a good source of antioxidants, fiber, carotene, Vitamin C, potassium amount other vitamins and minerals.
It's easy to just cut one up, throw it in the blender, add enough water to thin it out and that's it! You can add peaches, mangos or any fruit. So fresh tasting!!

I love this recipe. It is in the latest issue of Chatelaine magazine. Here is the link:
Easy Polenta Lasagna
I altered it somewhat by using ground turkey rather than ground beef. I also added green and red peppers along with mushroom and onions to the meat sauce. I used crushed tomatoes, rather than diced, only because that's what I had on hand.
I will definitely be making this again. Easy to make and a nice change from regular lasagna.

Being Italian, I grew up eating gnocchi regularly. My Mom used to make them homemade. I never did master that talent, although I'm sure I can. However, being the lazy person that I am lol, I bought a package of whole-wheat gnocchi instead for this recipe. I wanted a quick dish and that it was!
I sauteed cubes of boneless chicken breasts, green and red peppers, onions, broccoli and garlic with various spices.. I would of added mushrooms if I wouldn't have forgotten to buy some. Oh well.... [..]

I made this quick cake by throwing in different grains for the crust mixed with one egg, milk, cinnamon, coconut flour and shredded coconut. Bake in a 350 degree F oven for about 20 minutes. After it was cooled a bit, I spread a layer of 100% pure peanut butter on top along with a layer of walnut pieces and unsweetened coconut. For the top layer I used Dr. Oetker's low fat chocolate mousse (made with skim milk). In the mousse I stirred in some coconut and more walnuts. Sooo good!!
