Cream together butter and sugar until light and fluffy. Add eggs, vanilla and bananas and mix well. Stir in dry ingredients and blend well. Add the sour cream and continue mixing. Last, add in ¾ cup of chopped nuts, leaving ¼ cup of nuts to sprinkle on top of loafs (before baking).
Grease two small loaf pans very well. Bake at 350 for 50-55 minutes. Cool for about 10 minutes before removing from the pan onto wire racks for cooling. Delicious and Moist!
Note to save some nuts for the top of the loaf before baking. This will add a nice touch to your loaf and will look very attractive! Nice idea as a gift for a friend.
