Melitzanes Tiganites: Batter-Fried Eggplant

Melitzanes tiganites: batter-fried eggplant is one of my favorite quick recipes. This is a different try of cooking eggplants. If you are tired of the good old fashioned way of fried eggplants, try this new quick dish.

 
Cook Time: 20 mins

 
Melitzanes Tiganites recipe ingredients:

  • 1 eggplant, trimmed slice according to your desired size
  • olive oil for frying pan
  • 1 pinch of of sea salt.
  • A dash of pepper

For the Batter

  • 8 ozs of bottled water
  • 1 teaspoon of sea salt
  • 3/4 cup tablespoon of all-purpose flour

 
How to make melitzanes tiganites:

Prepare the eggplant: Put the slices in a bowl, salt, and let them sit for 20-25 minutes. (Pour off the liquid before dipping them in batter.)

Make the batter: In a separate bowl, pour the flour and add the water. Mix them together until no clumps can be seen.

When cooking: bring oil to high heat. Roll the eggplant in the batter. Use a fork to place pieces in oil and stir-fry the eggplant until golden on both sides and batter puffs up (5-6 minutes).

Put them in a separate container and serve while hot. Enjoy!
