Ever been to a restaurant and wish you could cook your favorite restaurant dish at home?. Well you can. Today we are going to look at Kentucky Fried Chicken founded by Colonel Sander. Colonel Sander had a gas station in Corbin, Kentucky. Being the perfect entrepreneur he started cooking for his customers.

Instead of coming to his gas station for gas they started coming for Colonel Sanders cooked meals. Harland Sanders expanded his business across the street opening a restaurant. The restaurant seated 142 people. The chickens were pressure cooked. Pressure cooking retains moisture and the chicken cooks faster. Sanders invented his secret eleven herbs and spices recipe to coat his chickens. His eleven herbs and spices are still used today in Kentucky Fried Chicken's® recipes. KFC Fried Chicken Copycat Recipe

 

Ingredients

-           2 fryer chicken cut in 8 pieces and marinated to taste

-           6 cups Crisco shortening

-           1 egg (well beaten)

-           2 cups milk

-           2 cups flour

-           2 teaspoons ground pepper

-           1 teaspoon Accent (msg)

-           1/8 teaspoon garlic powder

-           Dash paprika (to taste)

 

Directions:

 

-Place shortening into the pressure cooker and heat over medium heat to the shortening reaches 400°F.

- In a small bowl, combine the egg and milk.

- In a separate bowl, combine the remaining six dry ingredients.

- Dip each piece of chicken into the milk until fully moistened.

- Roll the moistened chicken in the flour mixture until well coated.

- In groups of four or five, drop the covered chicken pieces into the shortening and lock the lid (pressure cooker)

- When pressure builds up cook for 10 minutes.

Release to manufacturer's instructions.

- 1 teaspoon ground oregano

- 1 teaspoon chili powder

- 1 teaspoon ground sage

- 1 teaspoon dried basil

- 1 teaspoon dried marjoram

- 1 teaspoon pepper

- 2 teaspoons salt

- 2 tablespoons paprika

- 1 teaspoon onion salt

- 1 teaspoon garlic powder

- 2 tablespoons Accent (an MSG-based seasoning)

 

Raw Chicken Preparation

 

Chicken is a world favorite meat. It can be fried, grilled, baked, broiled or boiled. Chicken is low in saturated fats and provides proteins. Special handling is required before cooking chicken.

 

Raw chicken carrys bacteria including salmonella. Bacteria will rapidly multiple in temperatures 40 °F to 140° F.  Before cooking keep raw chicken refrigerated or frozen.

Freezing or refrigeration does not kill bacteria’s including salmonella. Bacteria’s are killed only when chicken is thoroughly cooked.

 

Bacteria in chicken can contaminate other foods, refrigerator shelves and other cooking items. Keep raw chicken isolated in sealed plastic bag before use. Wash hands and all cooking utensils in contact with raw chicken after use.

 

I personally like to rinse my chicken. If you rinse uncooked chicken sanitize sink and kitchen surfaces after rinsing.

 

Chicken has to be thoroughly cooked. Beef can be eaten rare or medium rare and chicken cannot. Rare or medium rare chicken can facilitate bacterial growth. Cut the thickest part of the chicken to make sure it is not pink. If thickest part is pink chicken is not thoroughly cooked.

 

Do not leave cooked chicken at room temperature for more than 2 hours.

 

Cooked chicken if handled properly can be stored in the refrigerator for 2 days.
