Filpino Recipes- Chicken Empanada
YOu would love this recipe of mine... So here is how you do it!
Ingredients:
For Filling:
1/4 kilo chicken meat, shredded
4 slices bacon
1 tbsp. garlic minced
1 pc. onion, chopped
3 pcs. potatoes, diced
1 pc. carrot, diced
1/4 cup peas
1/4 cup raisins (optional)
1 tbsp. seasoning
1 tbsp. soy sauce
Salt and pepper to taste
For Crust:
2 cups all-purpose flour
1/2 cup butter
3 tbsps. shortening
1/2 tsp. sugar
1 tsp. salt
1/3 cup water
1 pc. egg yolk
2 tbsps. fresh milk
Directions for Filling:
* Saute garlic and onions. Add potatoes and carrots and partially cook. Stir in shredded chicken, meat and bacon. Cook while constantly stirring. Add the peas and raisins. Season with soy sauce and seasoning. Add salt and pepper, if desired. When done, remove from heat and set aside. Let cool and use as filling.
Directions for Crust:
* Preheat oven to 400 degrees F. In a bowl, combine flour, salt and sugar. Add butter and shortening and cut with a pastry blender. Continue until mixture resembles coarse crumbs. Add water until dough forms into a ball. Roll dough and cut into 50 gram pieces. Roll out each piece to form thin flat rounds. Place a tablespoon of filling on one side of the dough and fold the other side over it. Secure sides by pressing it with a fork or by punching it. Prick the middle portion of each piece to allow air to escape while baking. Brush empanada with eggwash by combining egg yolk and milk, then bake for about 20 minutes or until crust is olden brown. Yields 6 servings.
