Easy Healthy Cake Recipes For Your Next Party

There are a lot of easy healthy cake recipes out there today, and everyone has their own preferences as to ingredients, flavor, and type of cake. Today, we offer you one of our favorites, that is quick and easy, and full of flavor. This is the classic Almond Spice Cake, and for this you will need the following ingredients:


½ cup + 1 tsp sugar      

½ cup + 1 tsp pureed prunes  

3 tbsp margarine

½ tsp almond extract    

½ tsp vanilla extract     

2 egg whites

1 egg          

1 ½ cup +1 tsp + 1 tbsp white all purpose flour

2 tsp baking powder     

½ tsp ground allspice    

¼ tsp salt

¼ cup + 1 tbsp skim milk


Mix sugar, prune puree, margarine, almond and vanilla extracts with a beater for two minutes. In a separate bowl combined flour, baking powder, allspice, and salt. Add in the prune mixture, the milk, and mix well. Spoon the batter into a coated pan, and bake for 1 hour at 350 degrees. You can serve this entry in the easy healthy cake recipes category with more of the prune puree, fresh prunes or dates, sprinkle with slivered almonds and some fat free whipped topping.
